The nightly pattern almost always comes down to when your dog's biggest meal goes in. Food eaten at dinner reaches the large intestine roughly six to eight hours later, which lands the peak of bacterial fermentation squarely in the middle of the night, and gas produced in the colon has to leave eventually. Two other things stack on top. A dog lying still does not disperse anything, and a sleeping dog's muscle tone relaxes, including the tone that holds gas in during the day. So the gas is not necessarily worse at night. It is being produced on an evening schedule and released in a room where you happen to be lying three feet away.

Ranked by how often each is the driver:

The fermentation clock
Gas in a dog's gut comes from two places, and only one of them is on a schedule.

Speed at the bowl and the shape of a dog's face both affect how much air goes down with food. What matters here is that air-derived gas moves fast, so it tends to show up within an hour or two of eating rather than at 3 a.m. If your dog is noisy right after dinner and quiet later, look at the bowl. If your dog is quiet after dinner and loud in the small hours, look at the fermentable content of the food instead.
What actually shifts the pattern
Move some of the daily ration earlier. Splitting one evening meal into a morning and an evening feed halves the substrate arriving in the colon at any one time, and it moves part of the fermentation peak into daylight hours when nobody is trying to sleep. This is the single most effective change and it costs nothing.
Audit the evening extras. Remove bedtime biscuits and chews for a week and see what happens before you change the food itself.
